Dorm Recipes: Top 10 Coma Inducing Grilled Cheeses

If you can cook it in your dorm complex, you can cook it anywhere. Here are some vegetarian friendly grilled cheese recipes for the environmental foodie!

For 6 roll-ups:

Ingredients:

  • 6 slices of bread
  • butter (check out vegan options here!)
  • 6 slices of your favorite cheese
  • marinara sauce (for dipping)

Instructions:

  1. Remove the crusts from the bread slices
  2. Flatten each slice of bread until very flat
  3. Place a slice of cheese on each flattened bread slice & roll each into a tight roll
  4. Moosh the edge of the roll to seal (a couple drops of water might help)
  5. Heat a couple Tablespoons of butter in a skillet over medium heat
  6. Using a spatula, roll the roll-ups around in the butter & flip & roll until all sides are golden brown

 

mac and cheeseMac & Grilled Cheese

Ingredients:

  • bread
  • butter (check out vegan options here!)
  • favorite cheese
  • favorite mac & cheese
  • cooking spray (check out vegan options here!)

Instructions:

  1. Start by making your favorite mac & cheese recipe
  2. Spread it in an even layer on a cookie sheet that has been sprayed with cooking spray & let cool
  3. Slice the cool mac & cheese into squares about ½ inch smaller than the bread
  4. Butter one side of each slice of bread
  5. On non buttered slice add a slice of cheese, mac & cheese, another slice of cheese, and another slide of bread butter side up
  6. Cook the sandwich on low for about 2 minutes, flipping halfway through to warm the mac & cheese
  7. Cook both sides more on medium heat until golden brown

Ingredients:

  • bread
  • butter (check out vegan options here!)
  • ⅓ cup ricotta cheese
  • ¼ cup chopped spinach
  • parmesan cheese (check out vegan options here!)
  • thin slices mozzarella cheese

Instructions:

  1. Mix ricotta cheese, spinach, and parmesan cheese
  2. Butter one side of each slice of bread
  3. On non buttered side add mix from above, and top with another slice of bread butter side up
  4. Cook each side on medium heat until golden brown

Ingredients:

  • bread
  • butter (check out vegan options here!)
  • mozzarella cheese slices
  • tomatoes
  • pesto sauce (check out vegan options here!)

Instructions:

  1. Butter one side of each slice of bread
  2. Spread opposite side with pesto sauce
  3. Add tomato slices and mozzarella cheese
  4. Cook each side on medium heat until golden brown

Ingredients:

  • bread
  • butter (check out vegan options here!)
  • parsley
  • double creme Brie
  • gorgonzola
  • (red anjou) pear

Instructions:

  1. Butter one side of each slice of bread & sprinkle with parsley
  2. Place slices of Brie on opposite side, then pear slices, then crumbles of gorgonzola, and top with another slice of bread, butter side up
  3. Cook each side on medium heat until golden brown

 

Lasagna-Grilled-Cheese-StripLasagna Grilled Cheese

Ingredients:

  • thick sliced bread
  • butter (check out vegan options here!)
  • favorite pasta sauce
  • ricotta cheese
  • tomatoes
  • mozzarella slices
  • parmesan cheese (check out vegan options here!)
  • meatballs cut into slices (check out vegan options here!)

Instructions:

  1. Spread butter on one side of each slice of bread
  2. On non buttered slice spread about 2 Tablespoons of pasta sauce, 2 Tablespoons of ricotta, tomato slices, mozzarella & parmesan cheeses, meatball slices, and another piece of bread butter side up
  3. Cook each side on medium heat until golden brown

Ingredients:

  • bread
  • butter (check out vegan options here!)
  • pineapple (fresh or canned)
  • vegetarian canadian bacon (check it out here!)
  • shredded Monterey Jack cheese
  • parsley

Instructions:

  1. Butter one side of each slice of bread and sprinkle with parsley
  2. On non buttered side place shredded cheese, canadian bacon, pineapple slices, and top with another slice of bread butter side up
  3. Cook each side on medium heat until golden brown

 

fontinaFontina Grilled Cheese

Ingredients:

  • thick sliced bread
  • butter (check out vegan options here!)
  • sliced fontina cheese
  • sliced vermont white cheddar
  • 6 cheese Italian blend (shredded)
  • shallot & chive gournay cheese

Instructions:

  1. Butter one side of each slice of bread
  2. On opposite side spread the shallot & chive gournay cheese
  3. Place fontina and vermont cheeses on next and top with a slice of bread buttered side up
  4. Cook each side on medium heat until lightly browned & add the 6 cheese Italian blend on top of the sandwich, then flip it over
  5. Take the pan on the burner immediately and let it sit for a few minutes until the cheese is golden brown

 

baked potatoBaked Potato Grilled Cheese

Ingredients:

  • bread
  • butter (check out vegan options here!)
  • garlic powder
  • chives
  • cheddar cheese (shredded)
  • sour cream
  • vegetarian bacon (check it out here!
  • potatoes

Instructions:

  1. Cut potato into even slices (use 4 for each sandwich)
  2. Cook sliced potatoes in a pan of butter until crispy, add garlic powder
  3. Cook bacon on medium heat until as crispy as desired
  4. Butter one side of each slice of bread
  5. On opposite side add about 1 Tablespoon of sour cream, cheddar cheese, potatoes, bacon, and chives
  6. Cook each side on medium heat until golden brown

Makes 2

Ingredients:

  • bread
  • butter (check out vegan options here!)
  • 8 oz mushrooms (sliced)
  • 1 sweet onion
  • shredded gouda cheese

Instructions:

  1. Sautee sliced mushrooms and chopped onion with butter
  2. Butter one side of each slice of bread
  3. On opposite side add sauteed mix, gouda cheese, and top with another slice of bread buttered side up
  4. Cook each side on medium heat until golden brown
